3 of my favourite sweet loaf recipes

I love cooking, and baking a loaf is such a great way to use excess fruit or veggies you may have. We always have ripe bananas in the kitchen and one of the many ways I like to use bananas is making a healthy banana bread.

I'm also super excited the weather is cool now, so I can put the oven back on! 

On any given day, there is a homemade loaf and/or bliss balls in the fridge to grab as a quick, easy snack between meals.

My favourite loaves though, are so nutritious, that you can even eat them for breakfast - a fantastic option when you are time poor or eating on the run! 

I'm not a recipe maker and I completely admire clever people who can create recipes so keen home cooks like me can follow them and nail it with confidence in one go!

VERY Healthy Banana Bread

I made this one while I was detoxing since it ticked it all the boxes. I also love it because it has 6 ingredients, all of which are always in my pantry. 

If you have a good food-processor, you can make the almond meal yourself. I used the leftover mushed almonds from a batch of almond milk I made. Alternatively you can buy almond meal from any supermarket or wholefoods shop.

PS since this is totally guilt-free and if you have a sweet tooth, there is room to make this loaf a little more indulgent if you like, by topping it with butter or honey. 

 

Banana Bread (gluten free)

This is my standard go-to when it comes to banana bread. Lately, I've been spicing it up by adding a cup of berries to it - it takes it to a whole new level! 

If you don't have any food intolerances, there is nothing stopping you from using a flour of your choice. Depending on how many other almond treats, almond milk etc I'm eating that week, I don't often need to also eat almond meal. In which case, I use a wholemeal flour (spelt usually) and sub in 1.5 cups to the 2 cups almond meal.

Healthy Spiced Pumpkin Loaf

This was a game changer in my house this week! I had an oversupply of pumpkin and there is only so much baked pumpkin and pumpkin soup we can eat in one week!

This loaf was a genius way to enjoy pumpkin and reminded me of eating pumpkin scones.
